Ok..so I have my logo, I've had "real" letterhead printed.. but I'd like to use the logo in Word and on Powerpoint documents. Any tips? Resolution? Format? When I reduce it to the size I like and put it in word it prints out with a gray background, and the letters in the logo are all pixelated.

If you'd like to use your logo in the Miscrosoft Office suite of programs, you can "place" it as a TIF, JPG, or WMF.
Depending on how you have your logo currently, it could possibly be converted to WMF, which is a "vector" file, and resolution shouldn't be an issue. Alternately, you could save it as either a TIF or a JPG. I'd suggest 300 dpi at the size you'd like it. For example, you might want to place it at a size of 1/2 inch x 1 inch. You'd make it that size in Photoshop, for instance, and 300 dpi.

Next dumb question.. how do you get a WMF out of Photoshop?
Seems every format I've tried (jpg, gif, png) I end up with a grey background.

Not sure how in Photoshop but in PSP you simply make the background layer transparent (turn it off) and choose "save as" and find the file extension .wmf

Are you saying you have opened a wmf file in Photoshop and now want to save as something else?

A WMF file is kind of a proprietary "Windows" vector format.
It stands for Windows Meta File.
To my knowledge, you can't export to a WMF from Photoshop.
If you only have the logo in Photoshop format, a TIFF or a JPG would probably be your best option.

That's correct. Photoshop does not save as WMF. It can be done it Illustrator.
